A few of this season's sides of smoked salmon from the Bottle & Board smokehouse will be available at Christmas!
Last year, Eddie produced a couple of sides of smoked salmon as a test batch. The salmon received a lemon zest and rosemary, salt and brown sugar cure and were then smoked over oak chips for 18 hours.
The resulting salmon had a lovely, soft, gentle and fragrant oaked flavour.
Price will be calculated by weight and the cost of buying in fresh salmon in December. we expect that a HALF side will cost approximately £30-35.

The cure is sea salt and light brown sugar with lemon and rosemary.

After eighteen hours of cold smoking the moisture content of the salmon is reduced, and the colour intensifies.
