What time? How much?

The smoked salmon samples, will be served from 14.00 at Bottle & Board, (Open from 13.00.) along with sourdough crackers from Refill Revolution at the Green Backyard, courtesy of Ben F`s Bakes. a wedge of fresh lemon & FGBP will also be available.

Please note, there will be a limited number of sample plates available, a `first come! first served` system will be in operation.


Smoked Salmon Sample Platter.

Approximately 100 grams. The purpose of this platter is to offer customers a small taste, before committing to purchasing a whole or half side.

PLEASE NOTE! All sales for salmon will be cash only. We are offering these sample platters at cost, and are not prepared to incur additional card transaction fees.


Prices:

The Price of Fish.

These prices are based on the price of fresh fish on day that we visit the fishmonger. The price of sea salt, sugar, & Oak wood dust are also occasionally subject to variation.


Comparing prices.

I was fortunate enough to recently take part in a thrilling discussion, with regard to the price of Smoked Salmon.* Fortnum & Mason, Harrods, M&S and Waitrose were all referenced. (Not to mention Rick Stein`s and Borough Market!) The mid-range price, appears to be about £6.50. per 100 grams of finished product.

The three sides of fish that I smoked at Christmas weighed an average of 1.58 kilos each. At £6.50 per 100 grams that amounts to, £102.83 per side.

Can Smoked Salmon be frozen?

Last Christmas I collected and cured fish on December the 22nd, the salmon was smoked on the 23rd and delivered on Christmas eve. Gina immediately wrapped half a side in a double layer of grease proof paper and placed it in the freezer. It was defrosted last week and showed no signs of deterioration. (No change in texture. No gritty, grainy crystallisation had occurred.) Once again, ask Myles or Tommy.
