Ultimate Christmas sandwich!

I have long been a fan of Big Al`s work, and inspired by his leftover Christmas sandwich I thought that I would clear out fridges, pantry`s and cellars and have a go at creating my own `Zero food waste!` Epic Christmas sandwich.
The fillings:
Smoked turkey breast, Gammon, poached in Schlenkerla Eiche Doppelbock and then roasted with a honey & Mustard glaze, and finally, Montgomery`s cheddar seemed like a good starting point.
Seasonings:
A good rounded sandwich needs something spicy, something sharp and something sweet. The ham slice was spread with English mustard, the Cheese slice had some finely chopped red onion added, and finally the Turkey had a spoonful of my homemade sassamanash sauce spread over it.
The assembly:
The Ham and cheese slices go face to face and the turkey is placed, face-down on top. The triple decker then goes into a hot grill for five minutes. The sandwich is then toasted in my homespun Panini grill, formed from two heavy cast iron skillets.
To serve:
I ate my sandwich with some homemade dill pickles that I received for Christmas, and a bottle of Delerium Christmas!
